with VPC Extra Virgin Olive Oil
Place the potatoes in a pot of cold water and add 3 teaspoons of salt. Bring to the boil. When the potatoes are soft, strain and sit for 1 minute to ensure all the water is fully drained. Mash the potatoes or use a mouli. Fold through the olive oil. Season with salt & pepper and serve with a sprinkle of fresh parsley and a drizzle of VPC Extra Virgin Olive Oil
Chef’s Tip: To make the mash smooth and silky, place the mash in a pan over medium heat and toss it several times. This is how chefs make it so smooth. Invest in a mouli and your mash, soups and napoli sauces will never come out smoother! |
